Candied Yams = Candied Yums!

What would Thanksgiving dinner be without candied yams? The even better thing is that the
traditional Thanksgiving sweet potato recipe is easy as pie! All you need is a 29 ounce can of
sweet potatoes, ¼ cup of butter cut into pieces, ½ cup of brown sugar and 1 ½ c miniature
marshmallows. Place the butter pieces evenly over the sweet potatoes, sprinkle with brown sugar
and top with marshmallows. Just bake at 400 degrees for 25 minutes and yum!

For the casserole
 3 – 20 ounce cans precooked sweet potatoes drained and mashed
 1 cup sugar
 2 tsp salt
 2 eggs
 1/2 stick softened butter
 1 tsp vanilla
 1/2 cup evaporated milk
For the topping
 1 cup packed brown sugar
 1/3 cup flour
 1/2 melted stick butter
 1 cup chopped pecans
1. Preheat oven to 350.
2. Mix mashed sweet potatoes, sugar, salt, eggs, softened butter, vanilla and
evaporated milk.
3. Place mixture into a 9 x 13 ungreased casserole dish.
4. Prepare topping by mixing brown sugar, flour, melted butter and nuts with a
fork in a separate bowl.
5. Sprinkle topping over casserole, making sure to entirely cover the casserole.
6. Bake for 35 – 40 minutes.
The convenient thing about this recipe is that it can be prepared ahead and
refrigerated (unbaked) for up to two days!
